Ingredients (Serves 2-3):
-8 oz pasta (rigatoni or penne work best)
-2 tbsp olive oil
-2 cloves garlic, minced
-1/2 tsp red pepper flakes (adjust to taste)
-1/4 cup tomato paste
-1/3 cup vodka
-1/2 cup heavy cream
-1/4 cup grated parmesan cheese (plus more for serving)
-Salt and pepper to taste
-Fresh basil (optional, for garnish)
Instructions
1. Cook the Pasta:
Bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente. Reserve 1/2 cup of pasta water before draining.
2. Sauté the Garlic & Chili Flakes:
In a large skillet over medium heat, warm the olive oil. Add the minced garlic and red pepper flakes. Cook until fragrant (about 1 minute).
3. Add the Tomato Paste:
Stir in the tomato paste and cook it down for 2-3 minutes until it deepens in color and caramelizes slightly. This step builds that rich umami flavor.
4. Deglaze with Vodka:
Pour in the vodka and stir, scraping any bits from the bottom of the pan. Let it simmer for 2 minutes to cook off the alcohol.
5. Creamy Time:
Lower the heat and stir in the heavy cream. Simmer for another 2-3 minutes until the sauce is smooth and velvety.
6. Finish the Sauce:
Add the drained pasta to the sauce along with the reserved pasta water and parmesan cheese. Stir to coat the pasta and let everything marry together for a minute or two. Season with salt and pepper to taste.
7. Serve it Up:
Plate the pasta, top with more parmesan, a crack of black pepper, and fresh basil if you're feeling fancy.
