
Fresh Mediterranean Salad with Lemon-Herb Vinaigrette

Ingredients (Serves 4):
For the Salad:
-1 english cucumber, diced
-1 pint cherry tomatoes, halved
-1 bell pepper (red or yellow), chopped
-1/2 red onion, thinly sliced
-1 cup kalamata olives, pitted and halved
-1/2 cup crumbled feta cheese
-1/4 cup chopped fresh parsley
-1 can chickpease, drained and rinsed
For the Lemon-Herb Vinaigrette:
-1/4 cup extra-virgin olive oil
-2 tbsp fresh lemon juice
-1 tsp red wine vinegar
-1 clove garlic, finely minced
-1/2 tsp dried oregano
-Salt and pepper to taste
Instructions:
1. Make the Dressing:
In a small bowl or jar, whisk together the olive oil, lemon juice, red wine vinegar, garlic, oregano, salt, and pepper. Set aside.
2. Assemble the Salad:
In a large bowl, combine the cucumber, tomatoes, bell pepper, red onion, olives, chickpeas, and parsley.
3. Dress it Up:
Pour the vinaigrette over the salad and toss gently to combine. Top with crumbled feta.
4. Chill or Serve:
Let it sit for 10-15 minutes for the flavors to mingle - or serve immediately for max crunch and freshness.
