Zesty Shrimp Tacos with Creamy Slaw and Lime Crema

Juicy, spiced shrimp tucked into warm tortillas, topped with crunchy slaw and a tangy lime crema - these tacos are bright, bold, and ridiculously easy to throw together. They feel like a treat, but take under 30 minutes to make. 

 

Ingredients (Serves 2-3, makes 6 tacos)

For the Shrimp:

-1 lb raw shrimp, peeled and deveined

-1 tbsp olive oil

-1 tsp chili poweder

-1/2 tsp smoked paprika

-1/2 tsp cumin

-1/4 garlic powder

-Salt & pepper to taste 

-Juice of 1/2 lime

For the Slaw:

-2 cups shredded cabbage (or a slaw mix)

-1/4 cup chopped cilantro

-1 tbsp mayo or greek yogurt

-1 tsp honey

-1 tsp lime juice

-Salt to taste

For the Lime Crema:

-1/4 cup sour cream or greek yogurt

-1 tbsp mayo

-Zest and juice of 1 lime

-Pinch of salt

For Serving:

-6 small corn or flour tortillas

-Extra cilantro, lime wedges, hot sauce, or sliced avocado

 

Instructions:

1. Season the Shrimp:

In a bowl, toss shrimp with olive oil, spices, salt, pepper, and lime juice. Set aside to marinate while you prep everything else. 

2. Make the Slaw:

In another bowl, mix the cabbage, cilantro, mayo, honey, lime juice, and a punch of salt. Toss until everything is lightly coated and crunchy. 

3. Whisk the Crema:

Stir together all the lime crema ingredients in a small bowl. Adjust lime or salt to taste. 

4. Cook the Shrimp:

Heat a skillet over medium-high heat. Add shrimp and cook 2-3 minutes per side until pink and slightly charred.

5. Warm the Tortillas:

Quickly toast your tortillas in a dry pan or over a flame for extra flavor. 

6. Assemble the Tacos:

Layer each tortilla with slaw, shrimp, a drizzle of lime crema, and any extras you like.
