Ingredients
For the salad:
- 1 large sweet potato, peeled and cubed
- 1 bunch kale, stems removed and chopped
- ½ cup cooked quinoa
- ¼ cup dried cranberries
- ¼ cup toasted pecans or walnuts
- Crumbled feta or goat cheese (optional)
For the dressing:
- 2 tbsp olive oil
- 1 tbsp apple cider vinegar
- 1 tsp Dijon mustard
- 1 tsp honey or maple syrup
- Salt & pepper to taste
How to Make It

Roast the sweet potatoes
Toss cubes with olive oil, salt, and pepper. Roast at 400°F for 25–30 minutes, flipping halfway, until tender and lightly caramelized. -
Prep the kale
Massage kale with a drizzle of olive oil and a pinch of salt for 1–2 minutes until softened. This makes it more tender and easier to eat. -
Whisk the dressing
Combine all dressing ingredients until smooth and emulsified. -
Assemble the salad
In a large bowl, combine kale, quinoa, roasted sweet potatoes, cranberries, and nuts. Toss with dressing. -
Finish & serve
Top with feta or goat cheese if using. Serve warm or at room temperature.
